Feeling quite good today, another early start to the morning back at college. Was a little bit hard to get up but hey, who else doesn't really feel like waking up when it is quarter to six in the morning. IT AIN'T CUTE!
As some readers know I have mild bursitis in my right knee, because of this, I experience a sharp pain in my knee every now and then. A main benefit of the Paleo diet is that it doesn't include inflammatory foods, this means no grains. If I am being honest even though the weather is hot and humid in the evenings I haven't been experiencing as much pain in my knee as usual, meaning that eating anti-inflammatory foods is starting to work its magic.

Back onto last nights' dinner, I would have to say it was the best meal on the menu so far. We had Butternut Pumpkin Soup & Portobello Mushroom Pizzas. One word can only describe this dinner... OOOOOOOFT!
I would never have thought to roast the pumpkin in the oven to cook but my god does it work. Mixed with coconut milk, salt & pepper and whizzed in the blender, you have an amazingly creamy Pumpkin Soup. The Mushroom Pizzas were essentially a stuffed mushroom without cheese, the topping included red pepper, tomato, onion, garlic, lemon juice and basil. A great meal indeed so I was pleased with that, I also didn't screw up the cooking of the recipe this time :D
As we had skipped one of the breakfasts yesterday we had decided to have a simple breakfast of two boiled eggs, it was nice to have a simple breakfast this morning for a change from cooking or eating leftovers.
Today's lunch was meant to be a left over helping of the shredded beef tacos but like because yesterday we did not make is meal we could not have it. We decided to replace this with some leftover pumpkin soup, because the soup was quite heavy we didn't eat all of it the night before so took to work and college with us.

I didn't get home from college today until 6:15pm so I didn't have enough time to write this blog up in a more timely manner then the last couple of days but that worked perfectly because I only really had one full meal to write about.
Tonight's meal was actually quite beautiful, although it would have been nice to have this meal on the weekend. The dinner tonight was Chicken Drumsticks with Sweet Potato Mash and Sauteed Spinach. The Chicken Drumsticks were coated with a mix of coconut oil, paprika, garlic powder, black pepper and chicken seasoning. This mixture made the chicken skin nice and crispy and was a great flavor to the chicken. Cinnamon and nutmeg created a sweet and savory flavor to the sweet potato mash with coconut oil to to help combine instead of the usual butter and/or milk.
