Today for me was also the first day back at study for the year which makes for a great fresh new start.
This was the perfect breakfast to start off with I felt, the balsamic vinegar added such a great flavor to the dish and filled the emptiness that was in my stomach after arriving at school with only having a soy milk coffee in the morning. I think soy milk may be off the paleo diet but everyone has to have a vice, after all I let Chae buy the lowest sugar cordial to ad to water as he doesn't like the taste of plain water.
Lunch was a tuna salad with a homemade dressing. Again I prepared this meal last night for both Chae and I to take with us in the morning. The salad consisted of cos lettuce, celery (which I hate), red onion, and of course tuna chunks. The dressing included Dijon mustard, olive oil, lemon juice and a pinch of garlic powder. Because of having the breakfast (which I don't usually eat) I wan't hungry earlier then a normal lunch time. The dressing was the perfect match to the salad and definitely gave plenty of flavor to the salad.This kept my satiety until around about 3:30pm where I had a small apple as a snack. Time to start cooking tonight's dinner which is a Chicken and Broccoli Stir Fry. YUM! |
