As I told you yesterday, last nights dinner was a Chicken and Broccoli Stir Fry. So as I started to make this meal I realised that I was missing one key ingredient to the meal. This ingredient was Coconut Aminos, When Chae and I went shopping on Sunday afternoon we had no idea what Coconut aminos were so we did not buy it, I researched what it was as I went to start preparing the dinner and realised that it is a substitute to Soy sauce (Answer to yesterday, Soy is not Paleo... as I said, everyone has to have a vice).
I did have to call Chae on his way home from work to buy Soy sauce (I didn't think anywhere would have Coconut Aminos at that time of the evening), unfortunately I didn't get the soy sauce in enough time as it actually needed to be marinaded with the Chicken, onion, garlic and ginger for 10-15 minutes prior to cooking so unfortunately the dinner probably didn't taste as well as it should have after being in a marinade. The broccoli that we bought also were quite small bunches so we didn't have enough of the stir fry left over to take to work as lunch :(

Day 2 began with a 7:45am wake up for a 9am start to work at Vital Health & Wellbeing. Breakfast for today was a Salsa Scrambled Eggs with Bacon & Avocado, at first I thought that this was an odd idea to a meal but it is actually a fairly easy meal. All you need to do is make your egg base and then add to a hot pan and cook for 10 seconds then add your favorite tomato salsa and cook as you would a scrambled egg.
I did find that this morning I didn't have enough time to cook AND eat this breakfast before I left for work, It seems that I will have to set my alarms a little bit earlier if I need to cook a fresh Breakfast the next morning as I had to chuck my breakfast in a container and take it with me to work. It was however a very delicious breakfast with the salsa adding another element to what is essentially a staple morning breakfast.
As I noted earlier, last nights dinner was supposed to double as today's lunch but we didn't have enough leftovers so we decided to make yesterday's salad again except we didn't make the dressing again, instead I drizzled some olive oil over the salad and seasoned with some salt and pepper.
To be honest, over the past two days I have actually noticed that I don't feel tired as early in the day as I normally do. I think this is because I have started to actually eat breakfast again in the mornings so am getting enough energy for my day.
